goodbye Nico, hello Stephanie

at the beginning of this month, we said goodbye to our friend and stagier, Nico DeLeon whom we shared an incredibly fun month with.  he came in swingin, provided a fresh set of eyes and perspective & left all too soon as most good things go.  we wish him continued success in the interim between LASA where he is the sous chef to Chad & Chase Valencia’s project.

to take his place is long time friend and former Daniel Boulud coworker from my LV past, Stephanie Sheaffer.  between the three of us, we share about 40 years of experience, traditional and new. 

this week, Steph prepared the terrine (photo below) for lunch, and if it’s any indication of what’s to come, then we can’t wait for her to grow into her spot and see what other delicious things she is more than capable of sharing.
