saying goodbye

three weeks in and we are beginning to see a clearer picture in terms of what is working and what isn’t.  so at the start of our fourth week, we will be saying goodbye to a few dishes that although we loved, the general public’s interest wasn’t quite as piqued.  goodbye sunchoke cocotte, raw milk curds, flan and delicata with cultured butter.  we hardly knew thee!  what’s in its place?  you’ll have to wait and see…
